- Prepare the Air Fryer: Preheat your air fryer to 400°F (200°C). This ensures that the pollock gets cooked through and crispy.
- Prepare the Pollock: Pat the pollock fillets dry with a paper towel; this helps remove excess moisture. This is a key step because too much moisture can prevent a crisp texture.
- Mix the Coating: In a shallow dish, combine breadcrumbs, paprika, garlic powder, onion powder, salt, and pepper. Make sure everything is evenly mixed.
- Egg Wash: In another bowl, beat the eggs until smooth. If using the vegan option, mix 1 tablespoon of flaxseed meal with 2.5 tablespoons of water and let it sit for a few minutes to thicken.
- Dip the Fillets: First, dip each pollock fillet in the egg wash, coating both sides well. Then, dredge them in the breadcrumb mixture, pressing lightly to ensure the coating adheres properly.
- Place in the Air Fryer: Arrange the breaded fillets in a single layer in the air fryer basket. Make sure they aren’t overcrowded; you may need to cook them in batches.
- Cooking Time: Air fry the pollock for about 10-12 minutes, flipping them halfway through. They should be golden brown and easily flake when tested with a fork.
- Serve: Once cooked, remove them from the air fryer, serve hot, and enjoy them with your favourite dipping sauce or a squeeze of fresh lemon juice.
